Ingredients

For the Dough:

  • 4 cups all-purpose flour
  • 1/2 cup unsalted butter, room teperature
  • 1 egg
  • 3/4 cup water
  • 1 tsp salt

For the Filling:

  • 2 Tablespoons olive oil
  • 2 white onions, chopped
  • 5 Cloves garlic, minced
  • 1/2 bell pepper, diced
  • 1 1/2 teaspoons chili powder
  • 1 Tablespoon cumin
  • 2 Tablespoons paprika
  • 1 Teaspoon oregano
  • 1 teaspoon beef boullion
  • 1 lb ground beef
  • salt and pepper
  • 1 bunch green onions, chopped
  • 1/2 cup chopped green olives
  • 12 cup fresh chopped parsley
  • 3 hard boiled eggs, peeled and finely chopped

Instructions

Step 1: Prepare the Dough

  1. Mix the flour and salt in a large bowl.
  2. Add the butter and combine with your hands until it resembles coarse crumbs.
  3. Beat the egg and water together, then slowly mix into the dough until it comes together.
  4. Knead the dough on a floured surface for a few minutes until smooth. Wrap it in plastic wrap and refrigerate for 30 minutes.

Step 2: Make the Filling

  1. Heat the olive oil in a pan over medium heat and sauté the onions until soft.
  2. Add the ground beef and cook until browned. Stir in the paprika, cumin, chili powder, oregano, beef boullion salt, and pepper.
  3. After about 5 minutes, remove from heat and fold in the chopped olives, green onions, parsley and hard-boiled egg. Let the filling cool.

Step 3: Assemble the Empanadas

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the dough to about 1/8 inch thick. Use a round cutter (or Mora dessert bowl hehe) to cut out 4-5 inch circles.
  3. Add a spoonful of the beef filling to each circle, fold over to make a half-moon, and seal the edges by pressing with a fork.
  4. Brush the empanadas with an egg wash (1 egg beaten with 1 tbsp water) to ensure a golden, crispy finish.

Step 4: Bake

      1. Bake the empanadas for 20-25 minutes, or until golden brown, or fry them in oil over medium high heat.
      2. Let cool slightly, then enjoy!
