Have no fear, this green goddess quick bread is packed with amazing nutrients for the skin, hair, hear, and everything in between. One bite, and you will be glowing in no time.

My husband Jerry has been trying to eat a little healthier, but he loves his cake/sweet breads, especially for breakfast with his coffee. My man loves matcha, and we had some zucchinis in the fridge, so I got to thinking.. A GREEN BREAD! Like banana bread, zucchini bread is moist, sweet, and a great way to use up that last zucchini in your fridge before it goes bad.

After some trial and error, I finally perfected this healthy Zucchini Bread with Avocado, Matcha Powder, and Pistachios. This unique recipe combines the subtle sweetness of zucchini, the creamy richness of avocado, the antioxidant power of matcha powder, and the nutty crunch of pistachios. Ingredients for Healthy Zucchini Bread with Avocado, Matcha Powder, and Pistachios:

Wet Ingredients:

  • 2 cups grated zucchini (about 1 medium-sized zucchini)
  • 1 ripe small avocado, mashed
  • 1 tablespoon matcha powder
  • 1/2 cup pure maple syrup
  • 1/4 cup honey
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce

 

Dry Ingredients:

  • 3 cups whole wheat flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup shelled pistachios, chopped, plus extra for topping (optional)

This quickbread is a little shy and apprehensive, with low self esteem. 😂😂

What I mean is, she rises in the oven, but if you over-mix or underbake, she will shrink down into her sad little self. (I know this because I've had to do a little bit of trial and error)

But I'm sure with a little nurturing you and this green goddess will be the best of friends.

  Ingredients:

Wet Ingredients:

  • 2 cups grated zucchini (about 1 medium-sized zucchini)
  • 1 ripe small avocado, mashed
  • 1 tablespoon matcha powder
  • 1/2 cup pure maple syrup
  • 1/4 cup honey
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce

Dry Ingredients:

  • 3 cups whole wheat flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup shelled pistachios, chopped, plus extra for topping (optional)
  • 1/2 cup white chocolate chips (optional)

 

Directions:

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper..

  2. Grate Zucchini, Mash Avocado, and Mix Matcha: Grate the zucchini and squeeze out excess moisture using a clean kitchen towel. In a medium sized bowl, mash the ripe avocado and mix the matcha powder to form a smooth paste.

  3. Mix Wet Ingredients: In the same bowl, combine the eggs, maple syrup, honey, vanilla extract, and applesauce. Add the grated zucchini. Mix until well combined.
  4. Combine Dry Ingredients: In a large bowl, whisk together whole wheat flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  5. Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in chopped pistachios and white chocolate chips if adding.

  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle additional chopped pistachios on top and drizzle honey if desired. Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.

  7. Cool and Enjoy: Allow the zucchini bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and savor the green bliss, you green goddess you!
